It is one of the winery’s most unique wines. Its apparent simplicity hides an experimental work in constant progress. We might define it as a wine with character combined with delicacy. With great minerality and complexity that demands a very high quality grape with a helping of sensitivity at the time of its preparation. It has a hint of acidity, a full body, and floral and fresh fruit nuances. Its unique nature implies a very limited production.
100% Mencía. A rosé with a personality.
Strict and meticulous selection of the grapes in the vineyard. Manual harvest in 15 kg boxes. Thermal treatment of the grapes during the process at 5ºC. Manual sorting table, gentle de-stemming and short maceration in the tank. Subsequent bleeding of free-run juice of Mencía. Static of the must during 24 hours and fermentation in stainless steel tanks at 15º C.
Mencía plants over 60 years old.
Mixture of fine elements, quartzite and slate.

Pale pink with bluish reflections, sweet nose, floral aromas, rose petals, jasmine, and violets, with hints of red fruits. In mouth, it is pleasant, fresh, and long.
Drink at 6-8°C. We like to enjoy it with a pickled trout salad.
